stole borrowed an excellent banana bread recipe from Nate and Deanna.
They made it for us once and it was so good we knew it was one we needed to add to our “official” recipe book.
Neither of us likes recipes that take hours to prepare and 50 different steps – with this recipe – 10 min and it’s ready to go in the oven.
But it wouldn’t be a Bungie classic if we left it as is. The first rule of Bungie cooking (according to Emily) is “if it’s good now it will be better with chocolate!” And the second rule (according to me) is “if you can make a good food bite size – make it so.”
So without further adieu –
Chocolate Banana Bread Madeleines
- Sugar – 3/4 cup
- Softened Butter – 1/2 cup
- Eggs – 2
- Mashed Ripe Bananas – 1 cup (about 2 bananas)
- Milk – 1/3 cup (can be Almond milk or Coconut milk if you prefer)
- Vanilla – 1 tsp
- Flour – 2 cups (Can be half wheat flour/half white flour if you’re into that – Emily is.)
- Baking Soda – 1 tsp
- Salt – 1/2 tsp
- Cocoa Powder – 1-2 tsp
- Chocolate chips – to taste
Preheat oven to 350 ° F.
Combine all ingredients in a large mixing bowl. Mix until it’s all well mixed.
Add mixture to a 8×4 or 9×5 greased pan.
Bake for 50-60 minutes (check the bread half way through and adjust your cooking time).
Remove from oven and let cool for 5 minutes – butter the top of the loaf while it’s still warm.
For a bite size snack try cooking it in a Madeleine pan – but adjust cooking time 10-15 minutes.
